This soup caught me by surprise! I made it with all the leftovers in my kitchen and it turned out so good I decided it needed a place here! Love it when that happens. This is the perfect savory soup for when you are low on time, it comes together quick!
Ingredients: Serves 4-5
- drizzle of olive oil
- 1 red onion, chopped
- 3 cloves garlic, minced
- 1 & 1/2 teaspoons curry powder
- 1 & 1/2 teaspoons garam masala
- 1 teaspoon sea salt
- 1 can diced tomatoes
- 1 can full fat coconut milk
- 1 cup vegetable broth or water (If you use water, you’ll probably want more salt)
- 3 cups chopped broccoli (I used frozen)
- 1 can white beans, rinsed and drained
- 1 block extra firm tofu, drained and cubed
Directions:
- Add a drizzle of olive oil to a soup pot on medium heat.
- Add the red onion and cook 10 minutes, until soft and browning. Add a little water to deglaze the pan if it starts to burn.
- Add the garlic and spices and cook 1 minute.
- Add all the remaining ingredients and bring the soup to a boil and then down to a simmer.
- Simmer 15 minutes, until broccoli is desired texture. Enjoy!
