Vegan Burger Bowls

I couldn’t find a vegan burger bowl recipe, so I made my own! This is such a simple and delicious salad. It’s a great way to get the amazing flavor of a veggie burger while getting your greens in! Also comes together quickly!

Ingredients: Serves 4

Ground “beef” tofu

  • 2 blocks extra firm tofu, drained and patted dry
  • 1/4 cup soy sauce
  • 1/4 cup nutritional yeast
  • 1 Tablespoon paprika
  • 1 Tablespoon chili powder
  • 2 teaspoons garlic powder

Baked Fries

  • 3 russet potatoes, cut into fries
  • drizzle of avocado oil
  • sprinkle of salt & pepper

Salad Base/Toppings

  • Lettuce/spring mix
  • Tomatoes, chopped
  • Pickles, chopped
  • Avocado, optional
  • Red onion, optional

Fry Sauce

  • 1/2 cup vegan mayo
  • 1/4 cup ketchup
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon dill relish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Directions

  1. First, preheat the oven to 425 degrees F. Line two baking sheets with parchment paper. Crumble the tofu into pieces and add to a large bowl. Add all the ground “beef” tofu ingredients and stir. Spread onto one of the lined baking sheets and bake for 30-40 minutes, until the end pieces are a nice texture and slightly crispy.
  2. Next, combine the baked fry ingrenients in a bowl and then spread them onto the other lined baking sheet. Bake 30-40 minutes, until the bottoms are golden and crispy.
  3. While those bake, prepare the toppings and make the fry sauce by whisking together the ingredients. I listed ideas, but the toppings can be any of your favorite burger toppings!
  4. When the tofu ground “beef” and baked fries are done, build the salads and drizzle them with fry sauce. Enjoy!
