These sandwiches are delicious! The texture of the mushrooms is so similar to the texture of pulled pork and the homemade BBQ sauce finishes it perfectly. Comment if you try them!
Ingredients: Serves 4
Mushroom Pulled “Pork”
- 12-16 oz. Ali’i/King Oyster mushrooms
- 2 Tablespoons avocado oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon sea salt
- 1/4 teaspoon red pepper flakes
- BBQ sauce (I love my homemade recipe found HERE)
Add-ons
- toasted Sourdough bread
- 2 large tomatoes, sliced
- lettuce
- 2 avocados, sliced
- pickled cabbage/pickled onions
Directions:
- Pre-heat the oven to 425 degrees F and line a baking sheet with parchment paper.
- Shred the mushrooms with a fork. They will become the same texture as shredded chicken/pulled pork. Once shredded, add them to a large bowl and drizzle with the avocado oil and add the spices (everything except the BBQ sauce).
- Spread the seasoned mushrooms onto the baking sheet and bake for 25 minutes.
- While they bake, make the BBQ sauce (if using homemade). Toast the bread and prepare the add-ons.
- Once the mushrooms are done, add them to a bowl and stir in the BBQ sauce (I used one batch of my recipe, about 3/4 cup). Build the sandwiches: toasted sourdough, avocado, tomato, lettuce, mushroom pulled “pork”, and pickled cabbage/pickled onions. Enjoy!
