These are so light yet satisfying and taste like a chocolate silk pie when slightly thawed and like a fudgesicle when frozen. They are made with all natural (mostly whole food) ingredients!
Ingredients: Serves 9
Crust
- 1/2 cup walnuts
- 1/2 cup almonds
- 1 cup dates, pitted (I prefer Medjool)
- pinch of sea salt
Chocolate Layer
- 3/4 cup coconut cream (refrigerate 2 cans overnight–DO NOT SHAKE–& then scoop off the cream top layer of the cans)
- 1/3 cup cacao powder
- 1 cup raw cashews (soak in very hot water for 15 minutes before blending if you don’t have a Vitamix)
- 1/3 cup pure maple syrup
- 1 teaspoon vanilla
Toppings
- flakey sea salt
- cacao nibs
Directions:
- Add crust ingredients to a high speed blender or food processor and blend until it forms a dough. Press into a 9×9″ glass pan lined with parchment paper. Freeze while you make the next layer.
- Combine all chocolate layer ingredients in a high speed blender and blend until smooth. Spread it over the crust layer and freeze for at least 3 hours or overnight for best results.
- Cut into squares and top with flakey sea salt and cacao nibs before serving. Enjoy!
