Veggie Spring Rolls with Peanut Sauce

These are one of those meals that tastes amazing and packs in so many veggies. Perfect for the new year! I love making these after we’ve been traveling to get a reset and feel my best!

Ingredients: Makes 9-10 rolls

Spring Rolls:

  • double recipe of Crispy Tofu, prepared and cooled
  • 6 oz. uncooked soba noodles, prepared and cooled 
  • 1 jalapeño, julienned 
  • 1 cucumber, julienned
  • 2 large carrots, julienned
  • 2 avocados*, sliced
  • 1/2 cup cilantro, chopped
  • 1/2 cup green onion, chopped 
  • 1 pack rice paper

Peanut Sauce:

  • 2/3 cup natural peanut butter
  • 1/4 cup tamari 
  • 3-4 Tablespoons water (start with 3)
  • 2 Tablespoons lemon juice 
  • 2 Tablespoons rice vinegar
  • 2 Tablespoons pure maple syrup
  • 2 teaspoons ginger, minced
  • Sprinkle of red pepper flakes

Directions:

  1. While the tofu & noodles are cooling, I like to chop all the veggies and prepare the sauce by combining all sauce ingredients in a medium sized bowl with a whisk. Store in the fridge.
  2. Once everything is cooled and prepped, fill a pie pan with warm water. Set a cutting board next to the pan. Dip a sheet of rice paper in the warm water for 5 seconds, before flipping to the other side for a few more seconds. Once it is moldable but not soggy, place it on the cutting board.
  3. In the center of the rice paper, place the vegetables and herbs in first, making a horizontal rectangle. Make sure the veggies aren’t too long or they will pierce through the paper. Next add 4-5 pieces of the tofu and a small handful of noodles. Do not overstuff.
  4. Now you will fold. Start by folding in the left and right sides of the paper towards the filling. Next, fold over the top and then roll down, tucking in the veggies and sealing the rice paper by pushing it against the other end (you can see my instagram for a visual @healthbyal).
  5. Continue filling and rolling the remaining rolls and enjoy with the peanut dipping sauce! Store in the fridge and enjoy within 5 days.

*Note: If you aren’t eating immediately, place the avocados in the middle of the roll rather than on bottom where they will be visible, as they will brown over time.
