Christmastime always reminds me of my Dad’s homemade salsa. He gives it out to all of our neighbors and friends every year. I think it’s such a neat tradition because we get so many sweets delivered around the holidays that it’s nice to have something different! He never measures, but I called him, got some rough estimates, and played around with the recipe until I got it down.

Ingredients: (makes a large bowl of salsa)
- 1/4 white onion, roughly chopped
- large handful fresh cilantro, roughly chopped
- 2 cloves garlic, minced
- 1 green bell pepper, roughly chopped
- 1 red bell pepper, roughly chopped
- juice from 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional, adds a little kick)
- 2 cans unsalted diced tomatoes
Directions:
- Blend all except diced tomatoes. DO NOT OVER-BLEND–it’s best when it’s chunky.
- Add the diced tomatoes and blend a few more seconds. Taste and add more salt if needed.
- Enjoy!
