Oat Chocolate Chip Cookies

These are to die for! They are perfectly sweet and best eaten right out of the oven.

They are a healthy alternative to most cookies because they have: no oil, no butter, and no cane sugar.

Ingredients: Serves 12

  • 1 cup flour
  • 1 & 1/3 cup oats
  • 1/3 cup finely shredded coconut
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup pure maple syrup
  • 2/3 cup natural peanut butter
  • 1/2 cup dark chocolate chips
  • Flakey sea salt, for topping

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients (except chocolate chips) in a large bowl.
  3. In a small pot on the stove on low heat, whisk the maple syrup and peanut butter combined.
  4. Stir the wet mixture into the dry ingredients.
  5. Stir in the dark chocolate chips.
  6. Form the dough into 12 disks (they will not change shape much in the oven).
  7. Bake for 10 minutes, until the bottoms are just golden brown. Sprinkle with flakey sea salt and enjoy!
