Mediterranean CousCous Cauliflower Salad

This salad is so refreshing and simple! So tasty you will come back for seconds, & thirds! My husband said it best: “I would never think these ingredients would be good together but it works so well!”.

Ingredients: Serves 3-4

  • 5-6 oz. box of pearled couscous (I like getting the Garlic 365 one–photo below, I also have subbed this for 3/4 cup quinoa and it works great too)*
  • drizzle of olive oil
  • 1 large head of cauliflower (or if using frozen cauliflower rice-a 32 oz. bag)
  • 1 teaspoon turmeric
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon coriander
  • 1/2 cup raisins
  • 1 large cucumber, chopped small
  • Juice from 1/2 a lemon
  • Optional: Sourdough bread or arugula for serving

Directions:

  1. Cook couscous as directed on package (typically takes 10-15 minutes)
  2. Cut the greens off the cauliflower and make it into “rice” by chopping small or pulsing in a food processor. I prefer to buy frozen cauliflower rice to make it easier.
  3. Add the olive oil to a large pan add the cauliflower and spices and cook, stirring for 10 minutes (if using frozen, it may take a few minutes longer). Once the couscous is done, add it in and remove the pan from heat.
  4. Stir in the raisins, cucumber, and lemon juice. This salad can be served either hot or cold, I enjoy both! Serve over a bed of arugula or with a slice of sourdough bread. Enjoy!

*Note: If you use unseasoned couscous, you may want to add more salt and some garlic powder to taste
