Miso Ramen

There’s a farmer’s market here on Maui that makes the best miso ramen! This is my own version which tastes just as amazing! This recipe is so simple and the leftovers taste amazing too.

Ingredients: (Serves 4)

  • 1 Tablespoon olive oil 
  • 5 cloves garlic, minced 
  • 1 & 1/2 Tablespoons ginger, minced
  • 1 head baby bok choy, sliced in half longways 
  • 10-12 shiitake mushrooms, sliced
  • 3 Tablespoons red miso paste
  • 6 cups vegetable broth 
  • 1 & 1/2 Tablespoons Soy sauce
  • Ramen noodles (6.-7 oz)

Directions:

  1. Make a double recipe of Crispy Tofu. 
  2. Heat olive oil in a large pan on medium heat. Add ginger and garlic and cook 1-2 minutes, until golden.
  3. Add the mushrooms and a few tablespoons of water and cook 3 minutes.* Add the baby bok choy and cook an additional 5 minutes. Add the miso paste and stir to coat veggies. Add the vegetable broth, soy sauce, and ramen noodles. 
  4. Bring to a boil and then down to a simmer. Once simmering, cook until noodles are done, typically 5-8 minutes. 
  5. Add toppings and enjoy!

 *Note: Add water whenever needed if veggies start sticking to the pan.
