Loose Chia Seed Pudding

This is a really fun treat I love to make after dinner. It’s less like a typical chia pudding and more like a drink. If you want more of a thick pudding texture, you can simply add more coconut milk and less plant milk. Although you should try it once as a drink, it’s very unique and delicious! Chia seeds are rich in fiber, omega-3 fatty acids, and protein. They also contain antioxidants. This is a great way to get a few tablespoons in while enjoying it!

Ingredients: Serves 2

  • 1/2 cup light coconut milk
  • 1 cup plant milk (I used soy)
  • 1/4 cup chia seeds
  • 1-2 Tablespoons honey, depending on sweetness preference

Directions:

  1. Combine all ingredients in a bowl and whisk until incorporated.
  2. Refrigerate for 1.5-2 hours and enjoy!

*Store in the fridge and keep for up to 5 days
