This is a perfect breakfast or dinner! It comes together very quickly (we’re talking under 30 minutes), tastes amazing, and is whole food/plant-based. We love doing this as breakfast for dinner with a smoothie on the side.
Ingredients: Serves 4
- 1 teaspoon extra virgin olive oil
- 1/2 red onion, chopped
- 1 yellow bell pepper, finely chopped
- 2 garlic cloves, minced
- 2 blocks extra firm tofu
- 2 cans black beans, rinsed and drained
- 2 teaspoons cumin
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1-2 Tablespoons hot sauce (I used Cholula)
- 1/2 cup cilantro, finely chopped
- 1/2 cup green onions, sliced thin
- 1 cup cherry tomatoes, halved lengthwise
- 2 avocados, diced
- your favorite salsa
Directions:
- Heat the olive oil in a large skillet over medium heat. After about 1 minute, add the onion and bell pepper and cook for 8-10 minutes, stirring occasionally, until the onion is browning.
- Meanwhile, drain the tofu and pat it dry with a cloth or paper towels. Try to get it as dry as possible. Save for later.
- Add the garlic to the skillet and cook an additional 1-2 minutes, stirring.
- Crumble the tofu with your hands and add both blocks to the skillet. Add the rinsed black beans as well.
- Add your spices and hot sauce and stir. Taste and add more hot sauce/sea salt if needed.
- Cook, stirring for 5 minutes.
- Remove the scramble from heat, and add servings to plates. Garnish with cilantro, green onion, cherry tomatoes, and avocado.
- Serve with your favorite salsa. Enjoy!
