Chocolate Rice Crispy Balls

These are so delicious and addicting. The perfect little sweet snack or energy bite!

Ingredients: Makes 12-15 balls

  • 2 cups Organic crispy rice cereal
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 2/3 cup dark chocolate chips
  • splash of plant milk (if you don’t have a microwave)
  • sprinkle of flakey sea salt

Directions:

  1. Mix the crispy rice cereal, PB, and honey in a large bowl. Freeze for 20 minutes.
  2. Remove the mixture from the freezer and roll it into small balls. Put them in the freezer again while you melt the chocolate.
  3. The best way to melt chocolate is to microwave just the dark chocolate chips for 30 seconds at a time at 50% power. Stir every 30 seconds and it should melt after a minute and a half or two minutes. Melting this way makes the chocolate “crack” when you bite into it. If you don’t have a microwave (like me currently), add the chocolate chips to a small pot on low heat over the stove with a splash of plant milk. Stir until melted. Melting this way makes the chocolate soft when you bite into it rather than “crunch”.
  4. Dip the balls into the melted chocolate so half of the balls are covered. Add them to a container lined with parchment paper. Sprinkle the balls with flakey sea salt. Freeze for a few hours or overnight for best results. Enjoy!
