I love salsa verde and for whatever reason–I always assumed it was hard to make or that tomatillos (green husked tomatoes) were hard to find! I was wrong–this is super quick & easy to make and tomatillos are at my local grocery store every time! Comment if you try it 🙂
Ingredients: Makes 2 small jars of salsa
- 1 white onion, roughly chopped
- 14 medium-sized tomatillos, husks removed & halved
- 2 jalapeños, sliced & seeds removed
- 4-5 cloves garlic, whole
- Handful of cilantro, roughly chopped
- 2 limes, juiced
- 1/2 teaspoon sea salt, + more to taste
Directions:
- Pre-heat the oven to broil (525 degrees F) and line a baking sheet with parchment paper. Add the onion, tomatillos, jalapeños, & garlic to the baking sheet and broil 10-15 minutes (rotating the pan 180 degrees halfway), until the tops are browned.
- Let the vegetables cool a few minutes and then add them to a blender or food processor, along with the cilantro, lime, and sea salt. Blend until smooth. Taste and add more salt if needed. Store in the fridge. Enjoy with chips or on tacos!
Note: Make sure to make a few hours before serving to have time to refrigerate so you won’t have warm salsa!
