These are hands down my new favorite cookie. They have such a vibrant macadamia nut flavor and are the perfect texture, even the second day. Make these immediately!
Ingredients: Makes 10
Dry ingredients:
- 1 cup white flour
- 1/2 cups oat flour
- 1/2 cup oats
- 1/4 cup finely shredded coconut
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
Wet ingredients:
- 1/2 cup macadamia nut butter
- 1/3 cup pure maple syrup
- 1/4 cup unsweetened apple sauce
Stir-ins:
- 1/3 cup dark chocolate chips
- 1/3 cup macadamia nuts (optional)
Directions:
- Pre-heat the oven to 350 degrees and line a baking sheet with parchment paper.
- Whisk dry ingredients in a large mixing bowl.
- Whisk wet ingredients in a small mixing bowl.
- Pour the wet ingredients into the large bowl with the dry ingredients and stir with a wooden spoon until combined.
- Add the stir in ingredients and stir.
- Form the dough into 10 small discs and add it to the baking sheet.
- Bake for 10-12 minutes, until the bottoms are golden brown. Enjoy!
