Mint Chocolate Oatmeal

I love mint chocolate everything! This oatmeal is fun because it’s a perfect healthy dessert but also could work as a sweet breakfast. Not only does it taste amazing, but makes your house smell so good too!

Ingredients: Makes 2 small servings or 1 large

  • 1/2 cup Oats (I used steel cut quick cooking oats)
  • 1/2 cup Organic soy milk
  • 1/2 cup water
  • 1 teaspoon cacao powder
  • 1-2 Tablespoons honey
  • 1/2 Tablespoon minced mint leaves 

Directions:

  1. Add the oats, soy milk, water, and cacao powder to a small pot on the stove and stir. Turn the heat to medium high and bring it to a boil. Immediately turn it down to a simmer and let it cook (uncovered) 5-7 minutes, stirring occasionally.
  2. Stir in the honey (tasting after a Tablespoon to see if it needs more) and mint leaves. Enjoy! (Note: If you like a more “soup-like” oatmeal, add some extra soy milk at this point).
