Nice cream is one of the healthiest treats around! It gets it’s ice cream texture from frozen bananas. I always keep a big silicone bag of frozen bananas in my freezer for this reason! This combo in particular is so delicious. Anything chocolate and coconut is a winner for me, like this Chocolate Coconut Pie I make every Thanksgiving. Try this nice cream out the next time you get a craving for a sweet treat. This recipe works best with a Vitamix or high speed blender. Comment if you try it!
Ingredients: Serves 1-2 (2 small servings or 1 large)
- 2 frozen bananas
- 1 Tablespoon cacao powder*
- 1/4 cup coconut milk
- 1/4 cup dark chocolate chips*
- 1/4 cup raw macadamia nuts
Directions:
- Add the frozen bananas, cacao powder, and coconut milk to the blender and blend until smooth. Do not add more coconut milk unless you want a runnier consistency.
- Add the dark chocolate chips and macadamia nuts to the blender and blend. I like to only blend these 5-7 seconds so there are still chunks! Enjoy!
Notes:
*You can always sub cacao powder with unsweetened cocoa powder, the difference is small and they taste very similar (cocoa powder is roasted, cacao is raw).
*You can sub the dark chocolate chips for unsweetened cacao nibs to make it added-sugar free
