This is a great Vegan alternative for Teriyaki chicken! This bowl is the perfect combo of salty and sweet. I love that this bowl has so much texture and lots of flavor. Try it out!
Ingredients: Serves 4
Roasted Broccoli
- 2 heads broccoli
- 1 Tablespoon extra virgin olive oil
- Sprinkle of sea salt
Crispy Crispy Tofu
- 2 blocks extra firm tofu
- 2 Tablespoons cornstarch
- 2 Tablespoons extra virgin olive oil
- Sprinkle of sea salt
Additional Ingredients
- 5 oz. Pad Thai Rice noodles, Stir-fry noodles, or Soba noodles
- Sesame seeds, for topping
- Green onion, chopped, for topping
Teriyaki Sauce
- 1 teaspoon toasted sesame oil
- 3 cloves garlic, minced
- 1/2 Tablespoon ginger, minced
- 1/4 cup rice vinegar
- 1/3 cup soy sauce
- 1-2 Tablespoons pure maple syrup, depending on sweetness preference
- 2 Tablespoons corn starch
- 1/3 cup water
Directions:
- First, roast the broccoli. Pre-heat the oven to 350 degrees F and line a baking sheet with parchment paper. Chop the broccoli into bite-sized pieces, drizzle with olive oil, and sprinkle with sea salt. Bake for 15 minutes. Set aside.
- While the broccoli cooks, prepare and bake the tofu using this Basic Crispy Tofu Recipe (doubled).
- While the tofu cooks, prepare the noodles as directed on the package.
- Next, make the teriyaki sauce. Heat the toasted sesame oil in a large pan on medium heat. Add garlic and ginger and cook 1 minute. Add the soy sauce, rice vinegar, & pure maple syrup. Whisk the corn starch and water in a small bowl and add to the pan. Whisk to combine. Bring the sauce to a boil and then turn it down and let it simmer until thickened (2-3 minutes). Remove from heat.
- When the tofu is done, add the tofu, noodles, and broccoli to the large pan of sauce. Mix to combine. Top with sesame seeds and green onion, Enjoy!
