These are the perfect treat that also happen to be sugar-free, gluten-free, and Vegan! The dates naturally sweeten the brownie bites, and the flakey sea salt gives it that extra boost of flavor. The best part is, they’re so healthy, you don’t have to feel guilty if you eat half the batch!
Ingredients: Makes 8 bites
- 1 cup pitted dates, packed
- 1/4 cup + 2 Tablespoons Organic soy milk (or other plant milk)
- 1/2 cup natural peanut butter
- 2 Tablespoons cacao powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon balsamic vinegar (to activate baking soda)
- Flakey sea salt, for sprinkling on top
Directions:
- Pre-heat the oven to 350 degrees F. Line a muffin tin with 8 liners.
- Add the dates and soy milk to a high speed blender or food processor (I prefer food processor) and blend until smooth (some chunks are okay).
- Pour the mixture into a large bowl and add the remaining ingredients (except flakey sea salt). Stir to combine (Mixture will be thick).
- Divide the mixture into the muffin tin, filling each halfway. Sprinkle lightly with flakey sea salt.
- Bake 12-13 minutes. (Do not over bake)
