Creamy herb hummus with a kick. This cilantro jalapeño hummus is the perfect blend. I love using it in salads and bowls, as a veggie dip, and on sandwiches. You can play around with it and add less or more jalapeño, depending on your spice level. Bonus: it’s also oil-free, (except for the drizzle on top) which is hard to find in hummus!
Ingredients:
- 1 can chickpeas, rinsed and drained
- 1/2 cup packed cilantro, roughly chopped
- 1/2 jalapeño, seeded and diced
- 1 Tablespoon lemon juice
- 1 Tablespoon water
- 2 Tablespoons tahini
- 2 cloves garlic, roughly chopped
- 1/4 teaspoon sea salt
Toppings: (optional)
- red pepper flakes
- olive oil
- extra diced jalapeño
Directions:
- Add all ingredients to a high speed blender or food processor (except optional toppings) and blend until well combined.
- Add toppings as desired. Enjoy! Store in the fridge for up to five days.
