Cheesy Vegan Kale Chips

I’ve finally perfected the kale chip! This seasoning is the perfect blend of salty/spicy/cheesy; except instead of using cheese, I use nutritional yeast, which is full of vitamins and nutrients! These are super simple and come together in less than minutes. This is perfect for when you have kale that is about to go bad (it shrinks a lot!).

Ingredients:

  • 1 large bunch curly kale
  • 2 Tablespoons avocado oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon red chili flakes
  • 3 Tablespoons nutritional yeast

Directions:

  1. Pre-heat the oven to 350 degrees F and line two baking sheets with parchment paper.
  2. Wash the kale and dry it thoroughly. Tear the kale into 2-3 inch pieces, discarding the bottom half of the stems.
  3. Split the kale into two bowls (two bowls helps the spices distribute more evenly). Drizzle the kale in each bowl with 1 Tablespoon of avocado oil and toss to evenly distribute.
  4. Sprinkle the kale in each bowl with 1/4 teaspoon of sea salt and 1/4 teaspoon of chili flakes. (If you have a small head of kale, use less salt).
  5. Sprinkle 1 Tablespoon of nutritional yeast onto the kale in each bowl. Add the kale from each bowl to the baking sheets. Sprinkle with the remaining 1 Tablespoon of nutritional yeast.
  6. Bake for 8 minutes. Flip the bigger pieces, and bake 3-5 more minutes, until completely crispy. I will typically take off the smaller pieces and some bigger pieces may need a few more minutes.
  7. Enjoy! Let them cool completely and store at room temperature in an airtight container. Best eaten immediately or within 2 days.

  1. Such a good and simple way to get kids to eat kale. I think this is a perfect idea for light summer dinner, in combination with some fresh mixed salad.
