Dark Chocolate Peanut Butter Cups

I used to LOVE Reese’s! What I don’t love are the ingredients…Trans fat (partially hydrogenated oil), GMO sugar, & TBHQ (preservative). All you need for these peanut butter cups is 4 simple ingredients & they taste even better than Reese’s! These are such a delicious treat and also would be so cute in an Easter Basket this weekend! There are so many processed treats that can easily be made at home and this is one of them.

Note: I use these silicone baking cups to get that perfect shape, but it works with paper liners as well.

Ingredients: Serves 12

  • 2 cups dark chocolate chips
  • 3/4 cup natural peanut butter (12 tablespoons-1 per cup)
  • Sea Salt

Directions:

  1. Line a muffin tin with 12 silicone or paper liners.
  2. Add 1 cup of the dark chocolate chips to a microwave-safe bowl and microwave at power level 5 for 30 seconds*. Stir and repeat this step until the chocolate is almost melted with just some chunks. Once there are just some chunks, stir quickly until the chocolate is completely melted.
  3. Carefully spoon 1 tablespoon into each liner, and smooth it out.
  4. Freeze for 10 minutes.
  5. Remove from the freezer and add 1 tablespoon of natural peanut butter to each cup.
  6. Freeze for 10 minutes.
  7. Repeat steps 2-3 to add the final chocolate layer to the cups.
  8. Sprinkle each cup with a tiny bit of sea salt.
  9. Freeze for 1 hour and enjoy! Store in the freezer for up to one week.

*Note: Microwaving is important, as melting on the stove will overheat the chocolate and prevent it from having a nice snap when you bite into it.
