Loaded Burrito Bowls

I recently went to a healthy cafe where we had the best burrito bowls! But they were small portions and pretty pricey! I decided to change make my own version with my twist on it–where I can make twice as much for half the price! The bowl I ate had a BBQ sauce, but since we don’t usually use BBQ sauce/keep it in our fridge, I made a homemade BBQ sauce which was SO much better! Did you know if you have ketchup and a few simple ingredients you can make your own too?? Here’s the Burrito Bowl recipe, complete with homemade sauce!

Ingredients (bowl): Serves 4

  • 1 cup brown rice
  • 4 golden potatoes
  • 1/2 Tablespoon avocado oil
  • sea salt
  • 2 cans black beans
  • 2 teaspoons cumin
  • handful of cilantro, chopped
  • 2 cups fresh or frozen corn
  • 4 cups lettuce or kale, chopped
  • 1 pint cherry tomatoes, halved
  • 2 avocados
  • 3 limes

Ingredients (BBQ sauce): Serves 4

  • 1/2 cup Organic ketchup (make sure it has no high fructose corn syrup)
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Sprinkle of red pepper flakes
  • 1/3 cup water

Directions:

  1. Pre-heat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Cook brown rice as directed on package.
  3. Chop the potatoes into small chunks and drizzle with avocado oil and a sprinkle of sea salt. Spread them on the parchment paper and bake for 30-45 minutes (until golden and crispy), checking on them every 15 minutes.
  4. Make the sauce by combining all sauce ingredients in a small saucepan over the stove on medium heat. Whisk to combine. Bring to a boil and then immediately turn down heat to low and let it simmer for 8-10 minutes.
  5. If using frozen corn, heat on the stove in a separate pan.
  6. Make the black beans by rinsing and draining the beans, and then heating them on the stove on medium/low heat. Add the cumin, salt to taste, & juice from two of the limes. Cook, stirring occasionally 5-10 minutes. I like to mash a bit with a fork as well. Stir in the cilantro.
  7. When the rice and potatoes are done, add all ingredients to a bowl and garnish each bowl with a slice of lime, avocado, and the sauce.
  8. Enjoy!
