Chocolate Coconut Pie

If you have ever visited the North Shore of Oahu, Hawaii, you have probably been to Ted’s Bakery and had their famous Chocolate Haupia Pie (Haupia is a type of Coconut Dessert with almost a pudding type texture, but firmer). This is my own version, and it divine!

Ingredients:

  • your favorite fresh or frozen pie crust, baked and cooled (I often use this one! (using all vegan butter-NO shortening)
  • 1 cup pitted dates
  • 2 cups hot water
  • 1 cup dark chocolate chips (plus a few extra for chocolate shavings to top the pie)
  • 3 tablespoons almond/soy milk
  • 1 can coconut cream (chilled overnight in the fridge)
  • double recipe of Coconut Whipped Cream

Directions:

  1. Soak the dates in the hot water for 8-10 minutes to soften them.
  2. Melt the dark chocolate chips, along with the almond/soy milk in a small saucepan on the stove on low heat. Stir continuously until fully melted.
  3. Open the can of coconut cream (for the filling-not double recipe of coconut whipped cream) and scoop the cream into a mixing bowl, leaving the liquid at the bottom in the can (you can discard, or save for smoothies). Use a hand mixer, food processor, or Vitamix to beat the coconut cream until it is the texture of whipped cream.
  4. Drain the soaked dates (except for 2 Tablespoons of the water), and add the dates and the 2 Tablespoons of water to a Vitamix or food processor. Blend until it makes a smooth paste.
  5. Combine the date paste, the melted chocolate, and the coconut whipped cream (again, the unsweetened cream, not the double recipe of Coconut Whipped Cream) and stir until well combined.
  6. Add the filling to the cooled pie crust.
  7. Chill the pie in the for 1 hr before completing the next step.
  8. Once the pie has chilled, make the double recipe of Coconut Whipped Cream & use a piping bag to top the pie with the whipped cream. *NOTE: If you get a bad batch of coconut cream and it’s not thick enough to pipe, simply use the best part of the cream and make the whipped cream and spread it rather than pipe it. After it refrigerates a few hours it will be a delicious coconut layer.
  9. Use a knife or a cheese grater to make a few chocolate shavings to top the pie. Enjoy! Store in the fridge.
  10. Refrigerate the pie overnight or at least 5 hours. Best when refrigerated overnight.
