Peanut Butter Cashew Chocolate Cookies

These are fast, delicious, and so cute! They are no-bake cookies, so you can literally make them in 15 minutes. I have never had a batch of cookies disappear as fast as these!

Ingredients: (Makes 9 small cookies)

  • 1 cup organic oats
  • 10-12 dates (I used deglet noor–if you use medjool, cut the amount in half)
  • 1/2 cup natural peanut butter
  • 1/4 cup dark chocolate chips
  • 3 tablespoons almond milk
  • 2 tablespoons chopped raw cashews

DIRECTIONS:

  1. Blend the oats and dates in a high speed blender or food processor.
  2. Pour the mixture into a bowl and stir in the peanut butter.
  3. Roll the mixture into 2-inch balls and then flatten with a fork.
  4. Place the chocolate chips and almond milk in a small saucepan and stir over low heat until melted.
  5. Dip the cookies half into the chocolate mixture and sprinkle with chopped cashews.
  6. Place the cookies in the freezer for 10-15 minutes to set the chocolate.

Store in an airtight container in the fridge. 

The cashews are optional, but they add a really nice crunch. I hope you love these! I know we will be making them often, they are our new favorite!
